Goat Cheese Drop Biscuits


These are the ones I made in Hawaii.
2 cups rising flour (or use all purpose)
1/2 tsp. baking soda (skip if using self rising flour)
2 tsp. baking powder (skip if using self rising flour)
1 tsp. salt
4 TBS. butter
4 TBS. goat cheese
1 cup buttermilk
1/4 cup Parmesan Cheese
extra butter for pan

Preheat oven to 425F with cast iron skillet. Place dry ingredients in medium bowl. Cut in the butter and goat cheese. The mixture should be crumbly. Make well in the middle of bowl and pour in the milk. Stir until the mix is moistened, adding an extra TBS. of milk if needed. Remove hot skillet from oven and place TBS. of butter into it. When butter has melted drop 1/4 cup of batter into pan. Bake 14-16 minutes until brown on top. Remove from oven and sprinkle with parmesan cheese.
You can also cook this out on the BBQ

i loved these in hawaii. do they taste as good on the mainland?

Everything tastes better in Hawaii but maybe it will give you sweet hawaiian memories
