Miracle Chicken Skillet


1/4 cup Light Mayo
2 cups Minute Rice
1 (14 oz.) can Chicken Broth
1-2 Tbsp. Chili Powder* (or to your taste buds... we use more)
8-10 boneless skinless chicken tenders (four chicken breast can be substituted)
1 Tomato, chopped
1/2 cup Shredded Cheese
Mix mayo, rice, broth and chili powder in large skillet. Bring to boil over medium heat. Add chicken and reduce heat to low. Cover and simmer 15 minutes. Top with cheese and tomatoes; cook 5 minutes or until chicken is cooked through.
*We like to use McCormick Brand Chili Powder

Crock-tober entry: Bosque Beans



Nothing tastes like Halloween more than Bosque Beans.

Here is the recipe:



2 lbs hamburger
1 lb bacon (remove fat and cut into pieces)

Dice:
2 large onions
1 or 2 medium green peppers
1 medium head celery

5 15-oz cans red kidney beans
5 8-oz cans tomato sauce
1/2 c water
1 Teaspoon vinegar
1 Teaspoon Worcetershire sauce
Salt & pepper to taste

Crumble 2 lbs of hamburger into hot pot after frying bacon until crispy and draining off grease. Fry hamburger until done.
Drain grease. Add celery, onions and green peppers. Stir well and add remaining ingredients.
Cook in crockpot for about 5 hours on low or 3 hours on the stove (stir often on stove).
Enjoy aroma.
Just before serving, add brown sugar to taste and stir well.

Serve with cornbread and honeybutter.
